Vegan Molasses Cookies

Right in time for Spring holidays, I wanted to share a simple recipe for soft, chewy, vegan molasses cookies. These classic and nostalgia-inducing cookies are perfect to make for Easter Sunday, or the end of Passover or Ramadan.

These cookies come out soft and chewy, and are great for anyone like me that has a soft spot for classic cookies. This recipe is super simple, and can be done beginning-to-end within 30 minutes.

Here’s a few tips for this recipe:

  • Sift your dry ingredients for a fluffier cookie!
  • Bake longer for firmer cookies
  • Tap the baking tray on a counter when they come out of the oven, to deflate the cookies
  • Flaxseed meal can be subbed out for: psyllium powder, xantham gum, chia seeds, coconut flour, cornstarch, arrowroot, or other binders that might be in your vegan pantry.
